Our 100% ABA Berkshire Bone in Leg is the hind leg with the ham hock removed. It displays the same luxurious, rich intramuscular marbling that is expected from the Berkshire Hog. The fresh ham is most often used to make ham, but there are other ways to appreciate this cut. It can be cut into ham steaks or deboned for a ham roast. The marrow in the bone makes a beautifully rich stock.
