Bacon: Cooking the Perfect Bacon

Bacon Tip #1:

Start with high-quality bacon. Although this seems like a no-brainer, it bears mentioning. The average pack of bacon found at your neighborhood grocery store is loaded with nitrates and comes from pigs that were fed a lifelong diet of antibiotics and hormones. Bacon Tip #2:

Roast your bacon! Cooking a lot of bacon for a crowd (or for one; no judgment) can be time-consuming and messy on the stovetop. That’s why we love the idea of making the oven do all the work. Preheat your oven to 400 degrees, and arrange the bacon on a foil-lined baking sheet. (This makes clean-up even easier, so you can focus on what’s important: eating bacon.) Roast for 15 to 20 minutes, depending on the thickness of your bacon.  

Bacon Tip #3:

Or, simmer your slices. If you’re cooking, say, five or fewer slices and you don’t want to fire up the oven, the stovetop will do just fine. Avoid splatters and keep your pan free of scorched fat by adding a little water—just enough to coat the bottom of the pan. Then, cook over medium-high heat until all the water has evaporated. This will simmer the bacon to a nice crispy yet tender texture.

Bacon Tip #4:

Mind the gap. Whether you’re cooking in the oven or on the stovetop, make sure each piece of bacon has some room. Leave about 1 inch between each strip so heat circulates evenly and crisps the bacon fat thoroughly.

Bacon Tip #5:

Let your bacon “rest.” Yes, this rule applies to all meat. Once your roasted or simmered bacon is cooked to perfection, remove each piece with tongs and place it on a plate lined with several paper towels. Let your heavenly bacon rest for a few minutes so it can drain and finish crisping. Because no one likes limp bacon, amiright?
