Sweet, Savory, & Spicy Breakfast Sammy

Tender Belly Bacon, Sausage and Egg Breakfast Sandwich

Here's a breakfast sammy that's a playful nod to a fast-food favorite, blending sweet, savory, but of course we had to add a Tender Belly twist and a hint of spice.

What you need:

For the habanero maple syrup dipping sauce:

  • 5 habaneros (de-seeded & chopped)
  • 3 garlic cloves (chopped)
  • 3 stems of Thyme
  • 1/4 cup apple cider vinegar
  • 2 cups maple syrup
  • Teaspoon salt
  • Teaspoon pepper


Start by making the habanero maple syrup dipping sauce:

  1. Chop up habaneros and garlic
  2. Sauté habaneros, garlic, thyme, apple cider vinegar, and syrup. Bring to a high heat until boiling. 
  3. Reduce heat and simmer for 10 minutes.
  4. While this is simmering you can start cooking the sammy.
  5. Strain, and set aside to cool

For the sandwich: 

  1. Cook Tender Belly Bacon & Sausage Patties in skillet.
  2. Cut bacon in half. Set aside.
  3. Crack eggs into a bowl, season with salt and pepper, add a dash of milk or half and half - whisk together.
  4. Warm up a skillet, and  cook for about 1 minute until the egg starts to set, then fold the egg over in half, then in half again.
  5. Heat a separate skillet up, and butter 2 slices of Rudi's Gluten-Free Sourdough bread.
  6. Place butter side down on skillet until lightly toasted. 
  7. Now, it's time to assemble the sammy:

    Begin by placing both slices of toasted bread with the buttered side facing down. On each slice, evenly drizzle the habanero maple syrup dipping sauce. Place bacon and sausage patties on top of the sauce on each slice. Choose one slice and top it with the cooked egg and arugula.  Complete the sandwich by placing the second slice of bread on top, with the sauce and meat side down, to stack all the ingredients together.
  8. Dip in extra habanero maple syrup sauce and enjoy!
