Bacon-Wrapped Onion Rings


These aren’t your average onion rings. We’re talking thick-cut Tender Belly bacon wrapped around golden onion rings, finished with a sticky, spicy Millionaire Rub that brings the perfect balance of sweet, smoke, and heat. Crispy, bold, and built to impress—this is snack time leveled up.

Perfect for BBQs, parties, or anytime you want to outshine the main dish. (Pro tip: make extra—one per person won’t cut it.) For reference...we like to serve about a half onion per person, but it’s up to you. Work backward for your ingredient needs based on how many people are being served. You’ll need one slice of bacon per onion ring.

Ingredients 

  • Large Yellow Onions
  • Tender Belly Bacon
  • For the Millionaire Rub: ¼ cup Maple Syrup, 1 TBSP brown Sugar and 1 TSP chili flakes (add more if you love heat!)

Instructions

  1. Preheat oven to 385 degrees
  2. Peel onions and slice each into ½ inch thick rounds
  3. Wrap Each Ring with 1 slice Bacon (use tooth picks to hold bacon in place if needed)
  4. Cook for 30 minutes at least. They will take longer than you think because of all the moisture from the onions.
  5. Pull out to add Millionaire Rub when they are about ¾ done… (so after 20 minutes or so)
  6. The resulting onion ring should be crispy and piping hot. As they cool they will harden up a bit and be easier to eat and share.
