Jalapeño Bacon Jam Smashburgers

Ingredients

For the Jalapeño Bacon Jam:

For the Burgers:

For Building the Burger:

  • Toasted burger buns
  • Yellow mustard
  • Lettuce
  • Prepared Jalapeño Bacon Jam & Smashburgers

Directions:

Make Jalapeño Bacon Jam:

  1. Cut 1 lb Tender Belly Bacon into strips. Cook and set aside.
  2. Cook 1/2 diced sweet onion in the bacon grease until softened.
  3. Add 1/2 jar pickled jalapeños with the juice, 3/4 cup brown sugar, 1/2 cup maple syrup, and the cooked bacon.
  4. Simmer on low, stirring often until thickened.

Make the Smashburgers:

  1. Finely chop 10 oz Tender Belly Bacon. Add to 2 lbs ground beef and 1/4 cup of your favorite seasoning.
  2. Mix to combine and form into 4 oz balls.
  3. To a pre-heated pan, add the burger balls and smash with a burger press.
  4. Flip once crispy and cook until done. You want to make sure the bacon is cooked through, so let these go to a higher temp than usual.
  5. Add cheese and melt.

Time to build:

  1. Toasted burger bun
  2. Yellow mustard
  3. Lettuce
  4. Two bacon burger patties
  5. Top with Jalapeño bacon jam
