Tender Belly Zucchini Boats

Servings: 1 Boat

Prep Time: 10 Minutes

Cook Time: 30 Minutes

Ingredients

  • 3 Zucchini (cut in half… of course use more if you are cooking for a party)
  • 1 Cup Par cooked Tender Belly Bacon Lardons (see step one)
  • 3 Tbsp Cream Cheese
  • 1 Cup Blue Cheese
  • 1 Cup grated Gouda Cheese
  • Salt and Pepper
  • Basil or Parsley for garnish

Directions:

  1. Prepare all of the ingredients for making the stuffed zucchini. Cut the bacon into smaller bits and par cook in a skillet until half-way done.
  2. Preheat oven to 370 degrees
  3. Place all of the ingredients into a large bowl and mix together.
  4. Cut each zucchini’s into halves and scoop out the inside of both sides.
  5. Fill each half of the zucchini’s fully and place them onto a baking sheet that has been covered with parchment paper.
  6. Place boats in the oven and bake for 30 minutes
