Chef Anthony Alejandro brought the flavor and the inspiration with this unforgettable dish: Emmentaler cheese-stuffed Tender Belly bacon on warm German potato salad, fried parsley, pickled apples, Düsseldorf mustard, and a mulled apple cider gastrique.

His inspiration behind the dish? He says, "Tender Belly Bacon reminds me of the old-world craftsmanship that is given to Charcuterie in Europe. When I tried it the first time, the first thing I thought was, 'I'd love a beer.' With that in mind, I sent off to create something to honor Tender Belly and these traditions with respect and fun."

Pair these with the warm German potato salad, homemade pickled apples, fried parsley, mulled apple cider gastrique, and the Düsseldorf mustard. Enjoy with your favorite micro-brew or Bavarian style beer!

Ingredients

  • 2 cups Buttermilk
  • 1 tsp Seasoned salt
  • 1 tsp granulated garlic
  • 1 cup flour
  • 4oz. Emmentaler cheese-cut in ½ in cubes
  • 3 Tender Belly Bacon Strips
  • 3 Wooden Skewers

Directions:

  1. On a lined sheet pan, par bake Tender Belly Bacon strips at 300 degrees for 10 minutes and cool in the refrigerator.
  2. Mix the buttermilk and seasonings.
  3. Wrap each of the cheese cubes tightly with the Tender Belly Bacon strips and skewer tightly shut then freeze for 3 hours.
  4. Fry the Tender Belly Bacon barrels at 350 degrees for until golden brown. About 2 minutes.
