Elote with Tender Belly Baconnaise

 

This bacon-lovers elote is bold and built for backyard BBQs. Grilled corn meets smoky Tender Belly bacon, Cotija cheese, fresh cilantro, and a rich swipe of Baconnaise. Super simple and always a crowd favorite.

Let’s get grilling. 

Ingredients

  • 2 lbs Chicken Thighs
  • Make a rub for the chicken of salt, cayenne, pepper and sweet paprika
  • ½ pack Tender Belly Bacon diced and cooked so fat is rendered out
  • Dressing from Potato salad listed above (make the dressing in equal amounts)
  • King’s Hawaiian rolls
  • ¼ lb shredded Gruyere Cheese

For the dressing:

  • 4 ears of corn (or one per person)
  • ½ pack Tender Belly Bacon cut into bits and cooked until crispy. Separate from fat and set both aside.
  • ½ bunch Cilantro chopped fine
  • 1 cup crumbled Cotija Cheese
  • 1 cup Mayonnaise

Instructions

  1. After cooking bacon and separating fat from bits, make your Baconnaise.
  2. Add 1 Tbsp bacon fat to Mayo and set aside.
  3. Using a super hot grill, peel husks back or take off completely depending on the finished look you are going for.
  4. Grill several minutes, leaving nice grill marks all the way around.
  5. Top each ear first with Baconnaise, then add bacon bits and cilantro and Cotija cheese.
