Bacon and Pepper Jack Scones

Ingredients

  • 10 ounces Tender Belly No-Sugar Added Signature Bacon
  • 3 cups unbleached all-purpose flour
  • 1 tablespoon baking powder
  • 2 cups shredded pepper jack cheese
  • 2¼ cups heavy cream + additional for basting
  • Black pepper, for sprinkling

Directions:

  1. Preheat oven to 425℉. Line one baking tray with aluminum foil and place an oven-safe wire rack into the tray. Lay strips of bacon on the wire rack and bake in the oven for 15-17 minutes, or until browned and cooked.
  2. Roughly chop the bacon strips and place in a large mixing bowl.
  3. To the mixing bowl, add flour, baking powder, cheese, and salt. Mix gently.
  4. Slowly pour the cream into the flour mixture, and stir using a silicone spatula until a cohesive dough forms.
  5. Gather the dough onto a lightly floured surface. Gently fold the dough over a few times and then shape into two round discs.
  6. Pat each disc gently to about 1-inch thick. Cut each disc into 6 equal portions.
  7. Line two baking trays with parchment paper. Place the scones onto the trays 2-inches apart, and use a basting brush to brush tops of scones with heavy cream. Sprinkle with black pepper.
  8. Bake the scones for 25-30 minutes, or until deeply golden brown.
  9. Remove from the oven and transfer to wire racks to cool. Enjoy!
