Smoky Tender Belly Bacon & Caramelized Onion Dip

Smoky Tender Belly Bacon & Caramelized Onion Dip

Ingredients

  • 1 tbsp olive oil
  • 4 big sweet onions, thinly sliced
  • 1/2 cup water (and a splash more if needed)
  • 4 oz cream cheese, softened
  • 1/2 cup mayo
  • 3/4 cup grated Romano cheese, split (Parmesan works too)
  • 6 slices bacon, cooked crispy and crumbled
  • Salt + pepper

Directions:

  1. Heat oil in a skillet over medium-high. Toss in the onions and water, and let them do their thing—slowly browning and caramelizing into perfection (around 45 minutes). Add water if they’re thirsty.
  2. Crank the oven to 350°F.
  3. In a bowl, mash cream cheese and mayo together until smooth. Stir in 1/2 cup Romano, the bacon, and those golden onions. Hit it with salt and pepper to taste.
  4. Spread it all into a baking dish, top with the rest of the Romano, and bake for 20-30 minutes until it’s bubbling and beautifully golden.
  5. Serve it hot with crusty bread, chips, or veggies—and prepare for the praise to roll in.
