Ingredients

  • 2 cups raw Brussels sprouts, trimmed and thinly sliced
  • 1 apple, thinly sliced (Honeycrisp or Fuji work well)
  • 4 slices cooked Tender Belly bacon, crumbled
  • 1/3 cup crumbled blue cheese
  • 1/4 cup dried cranberries or raisins (optional for a touch of sweetness)
  • 1/4 cup chopped pecans or walnuts (optional, for added crunch)


Dressing:

  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • Salt and black pepper, to taste

Directions:

  1. Prepare the Brussels sprouts: Use a knife or mandoline to thinly slice the Brussels sprouts, then place them in a large bowl.
  2. Add the mix-ins: Add the sliced apple, crumbled bacon, blue cheese, cranberries or raisins (if using), and nuts (if using) to the Brussels sprouts.
