BLTA Chop Salad

RECIPE INGREDIENTS:

2 SERVINGS
  • 8 slices Tender Belly No Sugar Bacon (diced)
  • 4 cups iceberg lettuce (chopped)
  • 4 cups romaine lettuce (chopped)
  • 1 cup grape tomatoes (halved)
  • 1/2 cup avocado (diced)
  • 1/4 cup cucumber (diced)
  • 1/4 cup roasted red peppers (diced)
  • 1/4 cup radish (diced)
  • 1/4 cup fresh mozzarella (diced)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon apple cider vinegar
  • 3 tablespoons olive oil

PREP METHOD:

PREP TIME: 20 MINUTES

COOKING TIME: 8 MINUTES

  1. Place bacon in skillet over medium heat. Cook, 6-8 minutes. Remove to plate to rest.
  2. In large mixing bowl whisk together vinegar, oil, salt and pepper.
  3. Add all lettuce, vegetables, cheese and bacon, lightly fold together.
  4. Done!
